Quinoa Salad with Mango and Mediterranean Avocado Oil

    Ingredients:
  • - 1 cup of quinoa.
  • - 1 avocado, diced.
  • - 1 mango, diced.
  • - 1 red bell pepper, chopped.
  • - 1/4 cup of red onion, chopped.
  • - 1/4 cup of fresh cilantro, chopped.
  • - 3 tablespoons of Mediterranean avocado oil.
  • - 2 tablespoons of lemon juice./li>
  • - Salt and pepper to taste.

Cook the quinoa according to the package instructions and let it cool.

In a large bowl, mix the cooked quinoa, avocado, mango, red bell pepper, red onion, and cilantro.

In a small bowl, whisk together the Mediterranean avocado oil, lemon juice, salt, and pepper. Pour the dressing over the salad and mix well.

Serve immediately.
